Ingredients
- 6 cups water
- 1 tsp chicken stock powder
- 500 gm dried black-eyed peas (we buy these from our local Indian food shop)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 medium capsicum, seeded & diced
- 1 jalapeƱo chile, seeded & minced
- 2 cups diced ham
- 1 cup diced bacon
- 1/2 tsp cayenne pepper
- 1 1/2 tsp cumin
- 1 tsp black pepper
- Spray inside slow cooker with oil
- Mix stock powder in 6 cups of water & pour into slow cooker
- Rinse black-eyed peas & combine in cooker with all other ingredients
- Cover the slow cooker & cook on low for six hours
