Chicken and Corn Soup

  • 1 Tbsp cooking oil
  • 1 Brown onion finely diced
  • 1 Stick celery, finely diced
  • 1 Clove garlic, crushed
  • 2 Cups frozen or canned corn
  • 500 g chicken, sliced
  • 1 Litre GF chicken stock
  • 150 g snow peas, chopped into 2 cm pieces
  • 1 Tbsp GF soy sauce
  1. The oil in a pan over medium heat
  2. Heat the onion, garlic and chicken until the onion is soft and the chicken is browned
  3. Add the corn and stock, bring to the boil and simmer for 10 minutes until the chicken is cooked through
  4. Stir in the soy sauce, snow peas and serve.
