Kidney Beans & Diced Sausage with Rice
Ingredients
- 8 thin sausages
- 1 onion diced
- 1 capsicum, diced
- 1½ tsp crushed garlic
- 1 can kidney beans, rinsed
- 400g tin diced tomatoes
- ½ tsp dried oregano
- ½ tsp pepper
- 1 dsp honey
- 1 cup basmati rice
Method
- Cook The Rice
- At the same time, cook the sausage in a large fry pan with a small dash of cooking oil for about 5 minutes
- Cut sausages into 1cm pieces and add back to pan
- Stir in onion, capsicum, and garlic, sauté until tender
- Add beans, tomatoes (including their juice) and honey
- Season with oregano and pepper
- Simmer uncovered for about 20 minutes
- Serve over rice
