SAGO PLUM PUDDING

Ingredients:

  • 1 cup soft GF breadcrumbs
  • 2 tablespoons sago
  • 60g butter
  • 1 cup milk
  • ½ cup sugar
  • 1 cup sultanas
  • 1 cup currants
  • 1 tablespoon mixed peel
  • ¼ teaspoon nutmeg
  • ½ teaspoon bicarb. soda
  • 1 teaspoon cold water
  • 1 egg
  • 2 tablespoons corn-based cornflour
  • 2 tablespoon brandy

Method:
  1. Heat milk and pour on crumbs, sago, and butter. Stand overnight or ½ hour.
  2. Add sugar, sultanas, currants, mixed peel and nutmeg. Mix thoroughly.
  3. Dissolve soda in cold water and add.
  4. Beat egg and stir in lightly.
  5. Sift in cornflour and stir.
  6. Pour into greased basin.
  7. Steam 2½ hours. Add boiling water often to keep ½ way up side of steamer.
