Potato and Anchovy Pie


Ingredients:

4 medium potatoes
2 small onions
60g butter
2 tins flat anchovy fillets
2/3 cup cream
extra tabsp butter
sprig of fresh dill

Method:


  • Peel, slice and cut potatoes into very thin straws.
  • Put in a saucepan with water to cover and bring to boil.
  • Boil 1 minute and rinse in cold water.
  • Slice onions and fry in half of the butter until transparent.
  • Arrange layers of potatoes, onions and anchovies etc in a greased ovenproof dish.
  • Pour the cream and a little anchovy oil over the top.
  • Dot with butter and cook in a hot oven (200C) for 45 minutes.
  • Garnish with fresh dill

You forgot to mention to add the cream in the method section. However, I made it tonight without it and it tasted great. I don't think it needs the cream at all. Just be generous with the anchovy oil. Yum!

Aaron, thanks for the photo of your creation. I've added it to the recipe. Also, the method now says when to add the cream.
