Omelette Wraps


This quick easy meal is great for breakfast, brunch or lunch. 3 eggs are sufficient for one wrap which is plenty for one person. If making more than one wrap, place each completed one in the oven set at "keep warm" until the last one is complete.

Ingredients
  • 3 eggs per wrap
  • cooking oil
  • shredded cheese (cheddar, tasty, etc.)
  • 1 slice of bacon per wrap
  • semi-dried tomato strips in oil (often labelled pizza topper)
  • salt & ground pepper
Method
  1. Cut bacon in strips & microwave for 30 sec or so until cooked
  2. Lightly oil a 30 cm non-stick pan
  3. Place pan on a hot plate
  4. Whisk three eggs + salt & ground pepper (to taste)
  5. Place in hot pan ensuring it covers the whole pan evenly
  6. When the omelette sets remove from heat
  7. Sprinkle shredded cheese down the middle
  8. Arrange some bacon strips down the middle
  9. Arrange a few strips of semi-dried tomato down the middle
  10. Sprinkle some more cheese over the filling
  11. Use two spatulas to roll/fold the wrap and then lift onto a serving plate
  12. Repeat steps 1 to 11 for each wrap
