  • Cooked brown rice--use all the rice produced from cooking 1 cup of brown rice (Hint: To cook brown rice place 1 cup in a microwave rice cooker with 2½ cups of water, microwave on high for 8 minutes and on 20% power for 40 minutes).
  • 1 large onion finely sliced, then cut slices in half
  • 500g haddock or smoked cod, skin removed
  • 3 Tbsp olive oil
  • 1 tsp curry powder
  • 4 eggs hard boiled and roughly chopped
  • ½ cup chopped fresh parsley
  • 1 cup sultanas
  • salt & pepper to taste
  1. Add oil to pan, sauté onion until golden
  2. Add curry powder and stir through
  3. Break fish into pieces the size of a matchbox and add, heat through being careful not to break up the fish pieces
  4. Add remaining ingredients, season to taste, and stir occasionally until warmed through
