Smoked Salmon Quiche

Ingredients:
  • 1 onion, finely chopped
  • 3 eggs
  • ¼ cup butter melted
  • 1 cup cheese grated
  • 1 cup milk
  • ½ cup GF self-raising flour
  • 1 tomato
  • 200 g smoked salmon
  • ½ cup parsley, chopped
Method:
  1. Whisk the eggs, cheese, onion, milk, salt and pepper in a bowl
  2. Pour in melted butter and flour and mix all ingredients until well combined
  3. Puree briefly with a hand-held blender
  4. Pour mixture into greased flan dish
  5. Break salmon into pieces, place evenly on the mixture
  6. Top with parsley and tomato slices
  7. Bake at 180ºC for ~50 minutes
