Creamy Char-Grilled Capsicum Penne

Ingredients

  • 250 g GF penne
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 tbsp minced garlic
  • 3 cups baby spinach leaves
  • 250 g jar char-grilled capsicum, sliced
  • 300 ml carton long-life cooking cream
  • 1 cup GF chicken stock
  • Ground black pepper to taste
  • Parmesan cheese

Method

  1. In a large saucepan of salted boiling water cook penne according to packet instructions
  2. When penne is cooked, pour off half a cup of liquid and reserve
  3. Strain off the remaining liquid & set the penne aside in the strainer for later 
  4. Return saucepan to hotplate & add oil
  5. Add onion and garlic & cook until soft
  6. Add spinach & capsicum - cook until spinach is wilted
  7. Stir in cream, chicken stock & reserved liquid from penne - bring to a simmer
  8. Add cooked penne & stir until re-heated - season with cracked pepper
  9. Garnish with Parmesan cheese & serve
