Kumara Pie

Ingredients:
  • 1.5 kg kumara
  • 2 tsp brown sugar
  • ½tsp cinnamon
  • 2 beaten eggs
  • Butter
  • Pineapple juice and rings or chunks


Method:
  • boil kumara
  • mash with butter and eggs
  • add pineapple juice
  • place in fireproof dish and decorate with pineapple rings
  • sprinkle with brown sugar
  • add seasonings.
  • brown about ½ hour in moderate oven before serving

Leftover Kumera Pie is excellent served for breakfast with fried eggs.
