Shepherd's Pies


  • 500g beef mince
  • 1 clove garlic, minced
  • 400g can diced tomatoes infused with herbs of choice (e.g. onion & oregano)
  • 400g can red kidney beans
  • 1 tsp beef stock powder
  • 2 tbsp tomato paste
  • 4 medium potatoes, peeled and diced
  • Margarine, milk, salt & pepper as required for the mash
  • Grated parmesan cheese
  1. Preheat oven to 200 C
  2. Boil the potatoes in a saucepan until soft and mash (adding margarine, dash of milk and salt and pepper to taste)
  3. At the same time, add garlic and mince to a non-stick pan and cook until mince is browned
  4. Add all remaining ingredients, except the cheese, the pan and simmer for 5 minutes
  5. Spoon mix into 4 ramekins, top with potato mash and sprinkle with parmesan cheese
  6. bake in oven until brown on top, serve with salad.
