White Christmas

Ingredients:

  • 2 cups GF rice bubbles
  • 1 cup powdered milk
  • 1 cup mixed fruit
  • 1 cup desiccated coconut
  • 1 cup icing sugar
  • 250 gms copha
  • Dash vanilla essence 
Method:
  1. Place all ingredients except copha into bowl
  2. Melt copha in a saucepan over gentle heat
  3. Pour over ingredients in bowl and mix well
  4. Press into slab tin
  5. Store in fridge until set
  6. Cut into pieces
  7. Store in fridge until served
